Opor Ayam Sayur (Chicken & Vegetable Coconut Soup)
Ingredients
200 grams chicken breast fillet,cubed
100 grams carrot,julienned
150 grams string beans,sliced lengthwise
2 salam (indonesian bay)leaves
2 lemongrass, crushed
2 cm galangal,crushed
2 teaspoons salt
1/2 teaspoon sugar
800 ml coconut milkfrom 1 coconut
2 tablespoons cooking oilfor sauteing
crispy shallot for garnish
ground spices blend:
8 cloves shallot
4 cloves garlic
1 1/2 teaspoons coriander seeds
1/2 teaspoon cumin
1/2 teaspoon nutmeg powder
1/2 teaspoon white peppercorn
6 candlenuts, toasted
1 cm ginger
Cooking Steps
- Heat oil on the pan. Sauté ground spices blend, salam leaves, lemongrass, and galangal until fragrant.
- Add in chicken fillet. Stir until the color changes.
- Add carrot and string beans. Stir well.
- Pour in coconut milk. Add salt and sugar. Cook until boiling and all ingredients are done.
