Bobor Katuk (Sweet Leaf Coconut Soup)
Ingredients
1 bunch (50 grams) sweet leaf,separated from stems
1,300 ml coconut milk from 1 coconut
10 stinky beans, sliced lengthwise
2 salam (indonesian bay)leaves
2 cm galangal,crushed
2¼ teaspoons salt
1/2 teaspoon white pepper powder
2 tablespoons cooking oilfor sautéing
ground spices blend:
6 cloves shallot
3 cloves garlic
3 candlenuts
1 tablespoon brown palm sugar
Cooking Steps
1. Heat cooking oil in the pan. Sauté ground spices blend, salam leaves, and galangal until fragrant. Add stinky beans. Stir it until softened.
2. Add coconut milk, salt, and white pepper powder. Bring it to boil. Add sweet leaf. Cook it until slightly softened. Remove it from heat.
3. Bobor Katuk (Sweet Leaf Coconut Soup) is ready to serve.
