Beef with Green Tomato Sauce

Ingredients

500 grams beef shank,cubed
8 cloves shallot,sliced
4 cloves garlic,sliced
25 grams curly redchili pepper,
100 grams green tomato,wedged into small pieces
1 cm ginger,crushed
2 cm galangal,crushed
2 salam (indonesia bay)leaves
1½ teaspoons salt
½ teaspoon sugar
600 ml water
2 tablespoons cooking oilfor sauteing
Cooking Steps

1. Heat cooking oil on the pan. Sauté shallot, garlic, chili pepper, ginger, galangal, and salam leaves until fragrant.
2. Add in beef shank. Stir well.
3. Add salt and sugar. Pour in water gradually. Cook until the beef is tender while the liquid is reduced and absorbed into the meat. Remove it from heat.
4. Beef with Green Tomato Sauce is ready to serve.
