Empal Daging (Sweet and Spicy Fried Beef)
Ingredients
500 grams beef
2 salam (indonesian bay)leaves
2 cm galangal,crushed
1 teaspoon salt
1,500 ml water
cooking oil for frying
ground spices blend:
2½ teaspoon coriander seeds
10 cloves shallot
3 cloves garlic
3 candlenuts, toasted
100 grams brown sugar
½ teaspoon salt
100 ml water
Cooking Steps
- Boil beef in the mixture of salam leaves, galangal, salt, and water until cooked. Remove beef from liquid.
- Cut beef along the grains into 5x4x1 ½ cm pieces. Crush beef with meat mallet or pestle until it is thin and widened.
- Ground Spices Blend: grind coriander seeds, shallot, garlic, candlenut, salt, and brown sugar. Pour in water gradually. Keep stirring it well.
- Marinate beef with ground spice blend. Let it set for 15 minutes.
- Fry beef until well done. Remove from heat.
- Empal Daging (Sweet and Spicy Fried Beef) is ready to serve.
