Empal Daging (Sweet and Spicy Fried Beef)

Ingredients

500 grams beef
2 salam (indonesian bay)leaves
2 cm galangal,crushed
1 teaspoon salt
1,500 ml water
cooking oil for frying

ground spices blend:
2½ teaspoon coriander seeds
10 cloves shallot
3 cloves garlic
3 candlenuts, toasted
100 grams brown sugar
½ teaspoon salt
100 ml water

Cooking Steps

  1. Boil beef in the mixture of salam leaves, galangal, salt, and water until cooked. Remove beef from liquid.
  2. Cut beef along the grains into 5x4x1 ½ cm pieces. Crush beef with meat mallet or pestle until it is thin and widened.
  3. Ground Spices Blend: grind coriander seeds, shallot, garlic, candlenut, salt, and brown sugar. Pour in water gradually. Keep stirring it well.
  4. Marinate beef with ground spice blend. Let it set for 15 minutes.
  5. Fry beef until well done. Remove from heat.
