Semur Daging Betawi (Beef Soy Stew)
Ingredients
500 grams beef shank,cut into pieces
300 grams potato,wedged lengthwise into 8 pieces,
8 cloves shallot,finely sliced
1 salam (indonesian bay)leaf
2 tomatoes, cut into pieces
½ teaspoon nutmeg powder
3 cloves
3 cm cinnamon
125 ml sweet soy sauce
1 teaspoon salt
1,500 ml water
2 tablespoons margarinefor sautéing
2 tablespoons crispy shallotfor garnish
ground spices blend:
6 cloves garlic
2 cm ginger
6 candlenuts, toasted
2 teaspoons coriander seeds
1/8 teaspoon cumin
Cooking Steps
1. Heat margarine on the cooking pan. Saute ground spices blend, shallot, and salam leaf until fragrant.
2. Add in beef. Stir until it changes color. Add tomato. Stir until softened.
3. Add in nutmeg powder, cloves, cinnamon, and salt. Stir until the beef is coated with spices blend. Add in potatoes. Stir well.
4. Pour in water gradually. Cook until the meat is tender. Remove from heat.
5. Semur Daging Betawi (Beef Soy Stew) is ready to serve with a sprinkle of crispy shallots on top.
