Lontong daging (beef-stuffed rice cake) is a common dish in primary school canteen. however, your kids do not have to go to canteen just to enjoy this dish. make it at our home, shall we?

Lontong Daging (Beef-Stuffed Rice Cake)

Ingredients

rice cake ingredients:
400 grams rice,washed
3 lemongrass, crushed
2 salam (indonesian bay)leaves
1¼ teaspoons salt
725 ml coconut milkfrom ¼ coconut
banana leaves for wrapping

filling ingredients:
100 grams minced beef
100 grams peeled potato,finely diced, fried
100 grams green beans,finely sliced into small round pieces
2 large red chili peppers,deseeded, finely sliced
1 salam (indonesian bay)leaf
1¾ teaspoon salt
¼ teaspoon white pepper powder
1¼ teaspoon sugar
250 ml coconut milkfrom ¼ coconut
2 tablespoons cooking oilfor sautéing

ground spices blend:
6 cloves shallot
3 cloves garlic
4 curly red chili peppers
2 large red chili peppers
½ teaspoon terasi (shrimp paste),fried
1 cm turmeric
3 candlenuts, toasted

Cooking Steps

  1. Filling: Heat cooking oil on the pan. Saute ground spices blend, large red chili pepper, and salam leaf until fragrant. Add ground beef. Stir it until it changes colour.
  2. Add potato, carrot, and green beans. Stir until tender. Add in salt, pepper, and sugar. Stir well. Pour in coconut milk. Cook until the liquid is reduced. Let it cool.
  3. Rice cakes: Bring coconut milk, lemongrass, salam leaves, and salt to boil. Add in rice. Stir until the liquid is absorbed into rice.
  4. Take a little bit rice cake mixture. Flatten it. Spoon filling ingredients on the center of it. Form into tube. Wrap it with banana leaf. Knot the end with thick yarn.
  5. Boil it for 3 hours until cooked.
  6. Lontong Daging (Beef-Stuffed Rice Cake) is ready to serve.
