Asem-Asem Daging (Javanese Beef Sour Soup)

Ingredients

400 grams beef shank,cut into small pieces
1,700 ml water
2 teaspoons tamarind juice
50 grams string beans,cut into 3 cm sticks
4 cloves garlic,finely sliced
8 cloves shallot,finely sliced
2 red chili peppers,cut into small pieces
2 green chili peppers,cut into small pieces
2 salam (indonesian bay)leaves
2 cm galangal,crushed
4 green tomatoes, cut into small pieces
3 tablespoons sweet soy sauce
4 teaspoons salt
25 grams brown palm sugar,finely chopped
1 tablespoon cooking oilfor sautéing
Cooking Steps

1. Bring water to boil. Add beef. Cook it.
2. Heat cooking oil on another pan. Saute garlic, shallot, red chili peppers, green chili peppers, salam leaves, galangal, and tomato until fragrant.
3. Pour it into the beef soup. Cook until boiling. Add sweet soy sauce, salt, and sugar. Stir well.
4. Add tamarind juice and string beans. Cook until done. Remove from heat.
