Ketupat empal (rice cake with beef coconut soup) is a dish from purwokerto. rice cake combined with beef in creamy and savory coconut soup is even more delicious with a sprinkle of crispy shallot.

Ketupat Empal (Rice Cake with Beef Coconut Soup)

Ingredients

500 grams beef silverside,cut into big cube
2 salam (indonesian bay)leaves
1 lemongrass, crushed
1 cm ginger,crushed
2,500 ml coconut milkfrom 2 coconuts
100 grams coarsely grated coconut
3½ teaspoons salt
1 teaspoon brown sugar
2 tablespoons cooking oilfor sautéing

ground spices blend:
12 cloves shallot
6 cloves garlic
1 teaspoon coriander seeds
¾ teaspoon white pepper powder
3 cm turmeric,toasted
4 candlenuts, toasted

sides:
6 rice cakes
2 tablespoons crispy shallot

Cooking Steps

1. Heat cooking oil on the pan. Sauté ground spices blend, salam leaves, galangal, and ginger until fragrant.
2. Add beef. Cook until it changes color.
3. Pour in coconut milk, grated coconut, salt, and brown sugar. Cook until done. Remove from heat.
4. Ketupat Empal (Rice Cake with Beef Coconut Soup) is ready to serve with ketupat rice cake and a sprinkle of crispy shallot.
