Ketupat Pandan Santan (Pandan Coconut Rice Cake)
Ingredients
11 ketupat wrappersmade from medium-sized pandan leaves
500 grams rice,soaked for 2 hours
1½ litre coconut milkfrom 1 coconut
8,500 ml water
Cooking Steps
1. Stuff pandan wrappers with rice until 60% full.
2. Boil the mixture of coconut milk and water until bubbling.
3. Add rice-stuffed pandan wrappers into the boiling liquid. Cook until set for 6 hours. Drain it.
4. Ketupat Pandan Santan (Pandan Coconut Rice Cake) is ready to serve.
