Padangnese Green Chili Duck Curry
1 duck, quartered
1 tablespoon tamarind juicefrom 1 teaspoon tamarind dissolved in 2 tablespoons water
1 teaspoon salt
green chili pepper curry ingredients:
2 salam (indonesian bay)leaves
2 cm galangal,crushed
1 lemongrass (white parts only),crushed
3 curly red chili peppers,finely sliced
2 large green chili peppers,finely sliced
1 green tomato,cut into small pieces
750 ml water
2¼ teaspoons salt
2 teaspoons sugar
100 ml cooking oilfor sautéing
ground spices blend:
8 cloves shallot
5 cloves garlic
10 large green chili peppers
5 curly green chili peppers
1. Marinate duck with tamarind juice and salt. Poke holes around it. Let it set for 30 minutes.
2. Grill duck until it is slightly browned. Set it aside.
3. Sauté ground spices blend, salam leaves, galangal, lemongrass, curly red chili peppers, and large green chili peppers until fragrant.
4. Add tomato. Stir until it is softened. Add in duck, salt, and sugar. Stir it well.
5. Pour in water gradually. Keep stirring the curry. Cook it until the liquid is thickened and absorbed into the duck. Remove it from heat.
6. Padangnese Green Chili Duck Curry is ready to serve.
