Gulai Asam (Sour Red Fish Curry)
1 pangasius catfish, cut into pieces
1 teaspoon tamarinddissolved in 1 tablespoon water
1 teaspoon salt
asam red curry ingredients:
1 lemongrass (white part only),crushed
2 cm galangal,crushed
1 turmeric leaf
2 teaspoons tamarinddissolved in 2 tablespoons water
300 ml water
ground spices blend:
5 curly red chili peppers
3 large red chili peppers
6 cloves shallot
¼ teaspoon terasi (shrimp paste)
1 cm turmeric,toasted
1 teaspoon salt
½ teaspoon sugar
1. Marinate pangasius catfish with tamarind juice and salt. Clean it well.
2. Marinate pangasius catfish with ground spices blend, lemongrass, turmeric leaf, and tamarind juice. Let it set for 15 minutes.
3. Pour in water into the marinated fish and cook it until the fish is well done while the liquid is thick and reduced. Remove it from heat.
4. Gulai Asam (Sour Red Fish Curry) is ready to serve.
