(Vegetables with Peanut Sauce)

There are many indonesian vegetable dish served with peanut sauce. it includes this lotek bandung (vegetables with peanut sauce). however, lotek bandung has creamier and starchier sauce since it has mashed potato in the sauce. lotek sauce is also sweeter than usual peanut sauce.

Lotek Bandung (Vegetables with Peanut Sauce).

Ingredients

1 bunch/10 grams water spinach (leaves only),boiled
100 grams mung bean sprouts,soaked in hot water
100 grams cabbage,cut into small pieces,

peanut sauce:
50 grams potato,boiled, mashed
1½ tablespoons brown palm sugar
1½ teaspoons salt
150 grams peanut,fried, ground
2 tablespoons tamarind juicefrom 2 teaspoons tamarind dissolved in 2 tablespoons water
200 ml hot water

ground spices blend:
4 red chili peppers
2 bird’s eye chili peppers
3 cloves shallot
2 cloves garlic
6 cm sand ginger

Cooking Steps

1. Peanut sauce: Mix well ground spices blend, potato, brown palm sugar, and salt. Add in ground peanut and tamarind juice. Stir it well. Pour in hot water. Stir it well.
2. Put water spinach, mung bean sprouts, and cabbage with a drench of peanut sauce on top of it.
3. Bandungnese Lotek (Vegetables in Peanut Sauce) is ready to serve.
