Indonesia has many version of grilled chicken. its savory flavor from the skin to the inside is enriched with smoky flavor from the grill. one of the best indonesian grilled chickens is ayam bakar bumbu rujak (rojak grilled chicken) from east java. let’s try it!

Ayam Bakar Bumbu Rujak (Rojak Grilled Chicken)

Ingredients

4 pieces chicken breast
1 tablespoon tamarind juice
1 teaspoon salt
2 salam (indonesian bay)leaves
2 lemongrass, crushed
1 teaspoon salt
2 teaspoons brown sugar
500 ml coconut milkfrom 1 coconut
4 tablespoons cooking oilfor sautéing

ground spices blend:
3 cloves garlic
8 cloves shallot
6 curly red chili peppers
3 large red chili peppers
2 cm turmeric,toasted
1 cm ginger

Cooking Steps

  1. Marinate chicken with salt and tamarind juice. Let it set for 20 minutes.
  2. Sauté ground spices blend, salam leaves, and lemongrass until fragrant. Add chicken. Cook until it changes color. Add salt and brown sugar. Stir well.
  3. Pour in coconut milk gradually. Cook until the chicken is tender and the liquid is reduced.
  4. Grill chicken until fragrant and browned. Glaze it with the remaining sauce while grilling it. Remove it from heat.
  5. Ayam Bakar Bumbu Rujak (Rojak Grilled Chicken) is ready to serve.
