Ayam Bakar Semur (Herb Soy Sauce Grilled Chicken)

Ingredients

1 chicken, butterflied
6 cloves shallot,thinly sliced
3 cloves
3 cm cinnamon
2 salam (indonesian bay)leaves
1 tomato, chopped into chunks
600 ml water
6 tablespoons sweet soy sauce
2 teaspoons salt
1/4 teaspoon white pepper powder
2 tablespoons cooking oilfor sautéing

ground spices blend:
6 cloves garlic
2 cm ginger
6 candlenuts, toasted
1/2 teaspoon cumin
½ teaspoon coriander seeds

sides:
200 grams carrot,cut into 1x5 cm sticks, boiled
200 grams string beans,cut into 5 cm sticks, boiled
300 grams baby potato,boiled

Cooking Steps

1. Sauté shallot, ground spices blend, clove, cinnamon, and salam leaves until fragrant.
2. Add in chicken. Stir until it changes color. Add tomato. Sauté until tender.
3. Add sweet soy sauce, salt, and pepper. Pour water in. Cook until the chicken is well done while the sauce is reduced and infused to the chicken. Remove it from heat. Set aside the remaining sauce.
4. Grill chicken over charcoal fire until browned. Remove it from heat
