Sweet Fried Beef
Ingredients
500 grams silverside beef
1,000 ml water
3 salam (indonesian bay)leaves
1 cm galangal,crushed
750 ml coconut milkfrom ½ coconut
1 tablespoon tamarind juicefrom 1 teaspoon tamarind dissolved in 1 tablespoon water
cooking oil for frying
ground spices blend:
10 cloves shallot
3 cloves garlic
1 tablespoon coriander seeds
50 grams brown palm sugar
½ tablespoon salt
Cooking Steps
1. Heat water on the saucepan. Add beef. Boil it until it is ¾ done. Remove it from saucepan and cut it along the grain. Crush it. Reduce the beef broth into 500 ml. Set aside.
2. Heat the the mixture of beef broth and coconut milk. Add beef, ground spices blend, salam leaves, and galangal. Cook it until the liquid is bubbling.
3. Add in tamarind juice. Stir it. Keep boiling it until the beef is tender and the sauce is highly reduced. Let it cool.
4. Fry beef over medium heat until it is browned. Remove from heat.
5. Sweet Fried Beef is ready to serve.
