Sour Vegetable Soup with Sliced Spices Blend

Ingredients

1 sweet corn cob, cut into 2½ cm chunks
75 grams paddy oat
100 grams young papaya,cut into chunks
7 yardlong beans, cut into 4 cm sticks
1/2 chayote squash, cubed
4 cabbage leaves, sliced
100 grams winged beans,cut into pieces
50 grams paddy oatleaves
6 cloves shallot,thinly sliced
2 cloves garlic,thinly sliced
2 cm galangal,crushed
3 large red chili peppers,halved lengthwise
2 tablespoons salt
1 tablespoon sugar
2 teaspoons tamarind
2,200 ml water
Cooking Steps

1. Cook water, shallot, garlic, and galangal until boiling and fragrant.
2. Add in sweet corn, melinjo, young papaya, and red chili pepper until half-cooked.
3. Add yardlong beans, chayote squash, cabbage, winged bean, melinjo leaves, salt, and sugar. Cook until done. Add in tamarind. Cook until boiling. Remove from heat.
