(Vegetable Salad with Spiced Coconut)

This urap sayur (vegetable salad with spiced coconut) is very simple to make. just boil the vegetables and sprinkle spiced coconut on top of it. do not boil the vegetables too long to keep its natural crunchiness.

Urap Sayur (Vegetable Salad with Spiced Coconut)

Ingredients

8 yardlong bean, cut into 2 cm strips
150 grams cabbage,roughly sliced
100 grams mungbean sprouts
1 small bunch spinach,separated from stems
100 grams carrot,julienned
300 grams coconut,roughly grated

ground spices blend:
6 curly red chili peppers
3 cloves garlic
3 cm sand ginger
6 lime leaves, midribs removed
½ teaspoon salt
2 teaspoons brown palm sugar,finely chopped

Cooking Steps

1. Boil vegetables in 1.000 ml water and 1 teaspoon salt quickly until slightly softened but still crunchy. Drain it. Set aside.
2. Spiced Grated Coconut: Mix grated coconut with ground spices blend. Steam it in pre-heated steamer for 25 minutes until well-cooked. Remove from heat. Let it cool.
3. Mix spiced grated coconut with the vegetables.
4. Urap Sayur (Vegetable Salad with Spiced Coconut) is ready to serve.
