Beef with Chive Sauce
Ingredients
300 grams beef silverside,cut into 4x1x1/2 cm pieces
3 lime leaves, midribs removed
20 chive
5 red bird’s eye chili peppers
1 tablespoon angciu (chinese red wine)
1 tablespoon light soy sauce
¼ teaspoon beef bouillonpowder
½ teaspoon salt
¼ teaspoon white pepper powder
¼ teaspoon sugar
500 ml water
1 teaspoon sesame oil
2 tablespoons cooking oilfor sautéing
coarsely ground spices blend:
6 cloves shallot
4 cloves garlic
2 cm ginger
Cooking Steps
1. Heat cooking oil. Sauté coarsely ground spices blend and lime leaves until fragrant.
2. Add in beef. Stir until it changes colour. Add chives, bird’s eye chili pepper, angciu, sweet soy sauce, light soy sauce, beef bouillon powder, salt, pepper, and sugar. Stir well.
3. Pour in water gradually. Cook and stir it until cooked and the liquid is reduced. Add sesame oil. Stir well. Remove from heat.
4. Beef with Chive Sauce is ready to serve.
