Spicy Meatball Stew
meatball ingredients:
300 grams ground beef
¾ teaspoon salt
¼ teaspoon white pepper powder
¼ teaspoon nutmeg powder
stew ingredients:
1 salam (indonesian bay)leaf
2 cm galangal
2 tomatoes, boiled, peeled, mashed
3 tablespoons sweet soy sauce
¾ teaspoon salt
½ teaspoon white pepper powder
¼ teaspoon nutmeg powder
½ teaspoon sugar
500 ml beef stock
2 tablespoons cooking oilfor sautéing
ground spices blend:
5 cloves shallot
2 cloves garlic
½ teaspoon white peppercorn
1 teaspoon coriander seeds
2 red bird’s eye chili peppers
2 curly red chili peppers
1. Meatballs: mix well ground beef, salt, pepper powder, and nutmeg powder. Form the mixture into small balls. Set aside.
2. Saute ground spices blend, salam leaf, and galangal until fragrant. Add in meatballs. Stir until it changes color.
3. Add tomato, sweet soy sauce, salt, pepper powder, nutmeg powder, and sugar. Stir well.
4. Pour in beef stock. Cook until the liquid is reduced and absorbed into the solid ingredients. Remove from heat.
5. Spicy Meatball Stew is ready to serve.
