This beef jerky is seasoned with spiced coconut and curry seasoning which make it tastes so divine. let’s try to cook this dendeng ragi kari (curried coconut beef jerky)!

Dendeng Ragi Kari (Curried Coconut Beef Jerky)

Ingredients

500 grams beef shank,sliced with ½ cm thickness against the grain
2 salam (indonesian bay)leaves
3 cm galangal,crushed
5 lime leaves, midribs removed
½ tablespoon curry powder
2 teaspoons tamarind juicefrom 2 tablespoons tamarind dissolved in 1 ½ tablespoons water
1,000 ml water
300 grams coarsely grated coconut
250 coconut milk from ½ coconut
3 tablespoons cooking oil

ground spices blend:
12 cloves shallot
6 cloves garlic
2 curly red chili peppers
3 candlenuts, toasted
1 tablespoon coriander seeds
2½ teaspoons salt
4 tablespoons chopped palm brown sugar

Cooking Steps

1. Mix beef with ground spices blend. Squeeze it gently and repeatedly.
2. Put it on the pan. Add salam leaves, galangal, lime leaves, lemongrass, curry powder, and tamarind juice.
3. Pour in water gradually and cook them until the beef is tender.
4. Add coarsely grated coconut and coconut milk. Cook until the liquid is absorbed into the beef. Add in cooking oil. Cook and stir it until browned and slightly dried. Remove from heat.
5. Dendeng Ragi Kari (Curried Coconut Beef Jerky) is ready to serve.
