(Spicy Fish Satay on Lemongrass)

This is a spanish mackerel dish made in a very special way. sate lilit ikan (spicy fish satay on lemongrass) combines minced fish, grated coconut, brown sugar, and other ingredients. it makes this fish dish tastes so extraordinary.

Sate Lilit Ikan (Spicy Fish Satay on Lemongrass)

Ingredients

250 grams spanish mackerel fillet,mashed
100 grams grated coconut,toasted
¼ teaspoon tamarind
½ teaspoon black peppercorn,coarsely ground
½ teaspoon brown palm sugar,finely chopped
2 tablespoons cooking oilfor sautéing
12 lemongrasses for skewering

ground spices blend:
2 large red chili peppers,deseeded
2 green bird’s eye chili peppers,finely chopped
3 cloves garlic
6 cloves shallot
1 cm turmeric,toasted
1 cm ginger
3 candlenuts, toasted
1 teaspoon coriander seeds
1¼ teaspoons salt
¼ teaspoon sugar

Cooking Steps

1. Mix well all ingredients with ground spices blend.
2. Take a little bit of the mixture. Stick it to the lemongrass skewers until it forms long and thick cylinder.
3. Grill it over charcoal fire until well done.
4. Sate Lilit Ikan (Spicy Fish Satay on Lemongrass) is ready to serve. (12 skewers)
