Sate Lilit Ikan (Spicy Fish Satay on Lemongrass)
Ingredients
250 grams spanish mackerel fillet,mashed
100 grams grated coconut,toasted
¼ teaspoon tamarind
½ teaspoon black peppercorn,coarsely ground
½ teaspoon brown palm sugar,finely chopped
2 tablespoons cooking oilfor sautéing
12 lemongrasses for skewering
ground spices blend:
2 large red chili peppers,deseeded
2 green bird’s eye chili peppers,finely chopped
3 cloves garlic
6 cloves shallot
1 cm turmeric,toasted
1 cm ginger
3 candlenuts, toasted
1 teaspoon coriander seeds
1¼ teaspoons salt
¼ teaspoon sugar
Cooking Steps
1. Mix well all ingredients with ground spices blend.
2. Take a little bit of the mixture. Stick it to the lemongrass skewers until it forms long and thick cylinder.
3. Grill it over charcoal fire until well done.
