Gulai Itik (Red Duck Curry)
1 duck, cut into 8 parts
200 ml coconut creamfrom the first press of 1 coconut
50 grams grated coconut,toasted, ground
2 teaspoons salt
¼ teaspoon white pepper powder
½ tablespoon sugar
1,550 ml coconut milkfrom the second press of 1 coconut
½ teaspoon lime juice
8 cloves shallot,finely sliced
2 tablespoons cooking oilfor sautéing
ground spices blend:
10 cloves shallot
4 red chili peppers,deseeded
2 cm ginger
2 cm galangal
5 cloves
1 tablespoon coriander seeds
2 nutmeg flowers
½ teaspoon nutmeg
½ teaspoon fennel seeds
1. Marinate duck in the mixture of ½ teaspoon salt and ½ teaspoon lime juice.
2. Heat cooking oil on the frying pan. Fry duck until golden brown. Set it aside.
3. Mix well duck, coconut cream, ground spices blend, toasted coconut, and salt. Let it set for 15 minutes.
4. Heat cooking oil on the pan. Add in duck. Stir until it changes color.
5. Add in coconut milk and sugar. Cook it until the duck is well done while the sauce is thick and reduced.
6. Slightly before removing it from heat, add lime juice and crispy shallot. Stir well. Remove from heat.
7. Gulai Itik (Red Duck Curry) is ready to serve.
