Asam Padeh Ikan (Sour and Spicy Mackerel Soup)
Ingredients
2 (550 grams) mackerel tuna,cut into 4 parts
2 tablespoons tamarind juice
1 teaspoon salt
1 lemongrass, crushed
1 turmeric leaf, knotted
1 cm galangal,crushed
2 asam kandis
400 ml water
ground spices blend:
8 cloves shallot
2 cloves garlic
3 large red chili peppers
4 curly red chili peppers
1 cm ginger
1 cm turmeric
2 candlenuts, toasted
1 teaspoon salt
½ teaspoon sugar
Cooking Steps
1. Marinate fish with tamarind juice and salt. Let it set for 20 minutes.
2. Boil water, lemongrass, turmeric leaves, lime leaves, galangal, and ground spices blend until bubbling and fragrant.
3. Add in mackerel tuna. Cook it until it changes color. Add asam kandis. Cook it until well done and the spices are infused into the fish. Remove it from heat.
4. Asam Padeh Ikan (Sour and Spicy Mackerel Soup) is ready to serve.
