Kupat Tahu Bandung
Ingredients
2 bandungnese white tofu, fried, cut into small pieces
100 grams mung bean sprouts,drenched with hot water
4 rice cakes, cut into small pieces
150 grams peanut,fried, ground
350 ml water
5 teaspoons tamarind juicefrom 2 teaspoons tamarind dissolved in 5 teaspoons water
ground spices blend:
4 red chili peppers
2 cloves garlic
½ teaspoon terasi (shrimp paste)
4½ teaspoons brown palm sugar
1½ teaspoons salt
toppings:
crispy shallot
sweet soy sauce
red crackers
Cooking Steps
1. Sauce: mix well ground spices blend, peanut, water, and tamarind. Cook it until boiling and oily. Remove it from heat.
2. Put rice cakes, tofu, and mung bean sprouts on the plate. Drench peanut sauce on top of it.
3. Kupat Tahu Bandung is ready to serve with its toppings.
