Gudeg (sweet braised young jackfruit and chicken) is an icon of yogyakarta region in indonesia. it is even called “gudeg city”. however, you don’t have to go to yogyakarta to enjoy this dish. you can also make it at home.

Gudeg (Sweet Braised Young Jackfruit and Chicken)

Ingredients

800 grams young jackfruit,cut into 2 cm pieces
5 teak leaves
2 cm galangal,crushed
2 salam (indonesian bay)leaves
1,000 ml coconut milkfrom 1 ½ coconut
1,000 ml coconut water
½ chicken, cut into 4 pieces

ground spices blend:
15 cloves shallot
6 cloves garlic
8 candlenuts
2½ tablespoons coriander seeds
135 grams brown palm sugar
½ tablespoon salt

Cooking Steps

1. Put all ingredients except chicken in a pot. Stir it well until the liquid is reduced in half.
2. Add in chicken. Stir it well.
3. Close the lid. Let it cooked over low heat until the sauce is dried and all ingredients are infused to the jackfruit and chicken. Remove it from heat.
4. Gudeg (Sweet Braised Young Jackfruit and Chicken) is ready to serve.
