Serabi Solo (Coconut Pancake with Jackfruit)
200 grams rice flour
½ teaspoon instant yeast
50 grams sugar
½ teaspoon salt
1 egg
500 ml coconut milkfrom 1 coconut
1 pandan leaf
¼ teaspoon salt
1 jackfruit, diced for sprinkle
areh (coconut cream sauce) ingredients:
200 ml coconut milkfrom ½ coconut
1 pandan leaf
¼ teaspoon salt
1. Heat clay pan with a little bit grated coconut inside it. Stir the coconut until oily. Remove the coconut and heat it again for 5 minutes over medium heat.
2. Boil coconut milk, pandan leaf, and salt. Keep stirring it until boiling. Reduce the coconut milk into 450 ml. Let it warm.
3. Areh: boil coconut milk, salt, and pandan leaf. Keep stirring it over low heat until it is thickened. Set it aside.
4. Mix well flour, instant yeast, sugar, and salt. Add egg. Mix well.
5. Pour in pandan-infused coconut milk gradually. Keep mixing it slowly for 15 minutes. Let it set for 1 hour.
6. Pour it into clay pan. Press the center until the edge is crusted. Let it doubled. Sprinkle it with jackfruit. Lower the heat. Close the lid and let it cooked. Remove it from heat. Glaze it with areh.
7. Serabi Solo (Coconut Pancake with Jackfruit) is ready to serve.
