Serabi Solo Durian (Coconut Pancake with Durian)
225 grams rice flour
½ teaspoon instant yeast
50 grams sugar
½ teaspoon salt
1 egg
500 ml coconut milkfrom 1 coconut
1 pandan leaf,knotted
¼ teaspoon salt
150 grams durian flesh
2 (30 grams) jackfruit,diced for topping
areh (coconut cream sauce) ingredients:
200 ml coconutfrom ½ coconut
¼ teaspoon salt
1 pandan leaf,knotted
1. Areh: boil coconut milk, salt, and pandan leaf. Keep stirring it over low heat until thickened. Set it aside.
2. Boil coconut milk, pandan leaf, and salt. Keep stirring it until boiling. Remove it from heat.
3. Add in durian. Blend it smoothly. Reduce it into 600 ml. Let it warm.
4. Mix rice flour, instant yeast, sugar, and salt. Mix it well. Add in egg. Stir well.
5. Pour in the durian-coconut milk mixture. Keep stirring and mixing it for 15 minutes with low speed. Let it set for 1 hour.
6. Heat steel pan with coconut inside it. Stir well coconut until it is oily. Discard the coconut. Heat it for 5 minutes over medium heat.
7. Pour in the mixture in steel pan. Press the center until the edge is crusted. Let it doubled. Sprinkle it with jackfruit. Lower the heat. Close the lid and let it cooked. Glaze it with areh. Remove it from heat.
8. Serabi Solo Durian (Coconut Pancake with Durian) is ready to serve.
