Bubur Ayam Kuah Kuning (Yellow Chicken Porridge)
Ingredients
porridge ingredients:
150 grams rice,cleanly washed
2 lemongrass, crushed
1 cm ginger,crushed
1,750 ml water
1 block chicken bouillon powder
½ teaspoon salt
yellow chicken broth ingredients:
1 free-range chicken,quartered
2 lemongrass, crushed
4 lime leaves, midribs removed
2 cm galangal,crushed
2 salam (indonesian bay)leaves
2½ teaspoons salt
½ teaspoon white pepper powder
½ teaspoon sugar
1,000 ml water
ground spices blend for yellow chicken broth:
10 cloves shallot
6 cloves garlic
4 toasted candlenuts
1 cm ginger
½ teaspoon coriander seeds
3 cm turmeric
complements:
100 grams cassava starch crackers
1 tablespoon crispy shallot
1 tablespoon celery,finely sliced
Cooking Steps
- Porridge: cook rice, lemongrass, and ginger in the mixture of water and chicken bouillon until the liquid is fully absorbed to the rice and the mixture becomes thick porridge. Set it aside.
- Yellow sauce: sauté ground spices blend, lime leaves, lemongrass, and salam leaves until fragrant. Add in chicken. Stir it until it changes color. Pour in water. Cook it until the chicken is well done and the spiced broth is infused to the chicken. Remove chicken from broth. Set aside the broth.
- Fry chicken quickly until the outside is browned. Remove from heat and shred it.
- Put hot porridge, shredded chicken, complements, and yellow chicken broth on the bowl.
- Bubur Ayam Kuah Kuning (Yellow Chicken Porridge) is ready to serve.
