Klepon is indeed a traditional snack. however, we can create a modern twist out of it. one of the examples is this klepon cokelat keju (chocolate cheese rice balls).
Klepon Cokelat Keju (Chocolate Cheese Rice Balls)
Ingredients
150 grams white glutinous rice flour
¼ teaspoon salt
25 ml suji juicefrom the squeeze of 20 suji leaves and 1 pandan leaf
½ teaspoon limewater
140 ml warm coconut milkfrom ¼ coconut
banana leaves, folded into small bowls
filling ingredients:
50 grams chocolate sprinkles
coating ingredients:
125 grams cheese,grated lengthwise
Cooking Steps
1. Mix glutinous rice flour and salt. Add in suji juice, limewater, and warm coconut milk gradually into elastic dough.
2. Take a little bit dough. Flatten it. Spoon the filling ingredients on top of it. Wrap it and form it into balls. Repeat it until all ingredients are used.
3. Boil them until they rise to the surface. Drain it.
4. Coat it with the cheese.
5. Klepon Cokelat Keju (Chocolate Cheese Rice Balls) is ready to serve in banana leaf bowls. (yields 28 pieces)
